Heart-shaped Fruit cake!

When it comes to cake, fruit cakes are my absolute favorite. The recipe that I am going to share is super easy and very delicious. This specific cake has a basic moist sponge base with fruits. I have also added fruits on one side of the open heart, which I think looks super cool and fun!

Method

  • Mix all the dry ingredients: 1 cup Maida, 1/2 tbsp Baking powder, 1/4 tbsp Baking soda, 2 tbsp Icing sugar. Now to this, add 50g melted butter, 200g Amul Mithai mate/Milkmaid. Add water accordingly to make a smooth cake batter.

  • Preheat the oven/microwave for 180* for 10 mins. And transfer the batter to a heart-shaped mold and bake it for 30-40 minutes.

  • After this, beat the whipping cream using an electric beater.

  • Wait till the cake is at room temperature and cut it into 2 layers (or 3) and start icing the cake.

  • Make a basketweave design on the cake and place fruits {Pineapple, Apples, Grapes, Berries, Oranges, Kiwi, Mango, Pomegranate } on the upper half side of the cake.

  • Now the fun part, melt the dark compound using the double boiling method and pour it into a piping bag. Take a butter/parchment paper and make a half-heart as shown in the figure.

  • Let it dry and place it on the center of the cake a little slant so that it makes a complete heart.

Decorate the cake using sprinkles and make borders { I used pomegranate to make borders }
